If you don't want a 3" exhaust or 700HP, why did you go with the sport700 turbos? To reduce the lag, you can do a few things. Z1 throttle bodies
2.5" charge pipes
larger intercoolers
SZ 3" Expansion down pipes
3" to 2.5" testpipes (get with resonators if sound is a concern) That'll move your powerband to the left, and your wallet down about $3k. If you had gone Sport530's in the first place, you'd have a more responsive curve. But, if you want wheels, get wheels. All depends on what you wanna do with your car. Again, IMHO, since you're not going to be driving it any time soon, I'd get the performance stuff done this winter, and get the wheels and tires in the spring.
